Zucchini Shrimp & Orzo

Similar to Blue Apron Meal
Serves: 4
Time: 25-35 minutes
Ingredients:
- 18 oz raw Large Shrimp (shells off)
- 1/2 lb Orzo
- 4 cloves Garlic
- 2 Zucchini
- Optional: 2 Tbsp Capers – can use more juice from the Lemon instead.
- 1 Lemon
- 1/4 cup grated Parmesan Cheese
- 1/4 cup Mascarpone Cheese *see note
- 1 tsp Calabrian Chile Paste or (spicier) Chili Garlic Sauce
- 1 Tbsp Olive Oil
- Garlic Powder, Salt, Pepper, Onion Powder, Smoked Paprika. Measure with your heart.
Note: Mascarpone Cheese can be substituted by the same amount of Cream Cheese or crème fraîche, however if there will be leftovers the Cream Cheese separates when reheated and is not as good.
Prep:
- Wash and dry the Zucchini.
- Halve (or quarter or sixth depending on girth) the zucchini lengthwise, then thinly slice crosswise.
- Peel and roughly chop Garlic and Capers if using.
- Zest the Lemon and keep the zest to the side.
- Cut lemon as desired for squeezing. Will squeeze at least half.
- De-shell shrimp.
- Pat shrimp dry with a paper towel.
- Place the shrimp in a bowl with the chopped garlic, capers, as much of the chili sauce as desired, 1 Tbsp olive oil, salt & pepper. Stir to combine
Cook the Pasta:
- Add the pasta to a pot of boiling, salted water.
- Cook uncovered for 8-10 minutes (or whatever your box says).
- Drain.
Cook the Zucchini:
- In a large non-stick pan, heat a drizzle of Olive Oil on medium-high heat till hot.
- Season your sliced zucchini (can be done out of the pan or in the pan per preference) with Garlic Powder, Salt, Pepper, Onion Powder, and Smoked Paprika (or whatever spices your heart desires). Stir to combine.
- Add zucchini to pan if not already, and leave to cook for 2-3 minutes to brown.
- Begin to stir occasionally until zucchini is tender.
- Transfer to a plate.
Cook the Shrimp:
- On medium-high heat in the same non-stick pan, dump the bowl with the shrimp and seasonings.
- Flatten shrimp into one layer.
- Cook without stirring for 2-3 minutes.
- Flip shrimp and continue cooking (stirring as desired) until internal temp of shrimp is 120 degrees F.
- Turn off the heat.
Finish and Serve:
- Add to the pan with the shrimp in it: cooked Orzo, cooked Zucchini, Mascarpone, and the juice of half the lemon (if not using capers add juice of full lemon).
- Taste and season with Salt & Pepper as desired.
- Top with Parmesan and serve.
